We usually have plenty food leftover in the fridge from dinners I prepare. There is enough for two nights of what we like to call, “fend”. That term meaning just get whatever you want to eat. I like what I cook, and always make enough so we have those extras.
Cooking is something I try to do on a regular basis. You can control what goes into it and know that it is coming from your kitchen with your ingredients. That being said, it does get tiresome to just cook for two. We are both exhausted at the end of the day, and I know sometimes, I just don’t want to do it.
Asking my husband is not fair either. His job consists of physical labor. He helps but I don’t expect him to make an entire meal. This is the main reason I make bigger quantities. Many of the extras, I can freeze, until another time. An example is a small pork loin roast, cut in half for two meals. I also make a huge pot of spaghetti sauce, and divide it up into several containers to freeze. The hard part of that meal is now done. However, then comes those times when I get my cravings. Those leftovers just won’t do.
Tonight was a pizza special at our local carry out. Any large pizza for $5.00. Sounded like a plan to us. I ordered plain cheese on a thin crust, while my husband ordered ham and pineapple on a regular crust, along with an order of wings. Not the healthiest, but then not the worst. This food will then be added to the leftover inventory. We try to keep it to once a week. You have to indulge sometimes.
Tomorrow night we will do the leftovers,that we skipped tonight. And maybe the night after that. There is spaghetti, steamed shrimp, pepper steak ,italian sausage, and now pizza and wings. It really isn’t much, when we sit it out. It makes for a quick meal though and occasionally I prepare a quick salad as a side dish.
My carry out suggestion probably won’t win over many nutritionists or dietitians. There are some good carry out options to go along with the not so good ones too. Choose that turkey club or hoagie, instead of that cheese steak or meatball option. Order the greek salad instead of onion rings. Convenience can be healthy, if you order it. Maybe if I was 35 again, I would have the energy to cook 7 days a week. I’m not, so this works for us! Did someone say Panera!
