Banana muffins can be a great little treat. I don’t know about other people, but I get tired of throwing away perfectly good bananas just because they get to ripe. Bananas are probably the one food that gets a bad rap when they get to mushy and sweet to eat. This is the perfect reason why they are the best for this banana muffin recipe. These have become a big favorite of my husband. They are his go to snack in the morning when he needs something to tie him over until lunch. The best reason is that these banana muffins are healthy, but still really tasty. No sugar here. The honey works great.
Ingredients:
2 cups of whole white wheat flour
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 ground ginger
1/2 teaspoon salt
4 medium ripe as you can get them bananas
1/4 cup unsalted butter ( Kerry Gold Unsalted Grass Fed is great) Melt in microwave 40 seconds.
1/3 cup honey
1 egg
1 cup unsweetened vanilla almond milk (gives a nice flavor and good for the lactose sensitive)
3 teaspoons pure vanilla extract
Directions:
1. Pre-heat oven to 400 degrees. Grease 2-12 standard cup muffin tins with a Pam like spray
2. Take a large bowl and whisk together the first 6 ingredients.
3. Mash the bananas in a medium bowl with a fork until almost a liquid. Stir in butter, honey
and egg. Blend well. Add in the milk and vanilla. Mix until completely blended.
4. Take the wet ingredients and pour over the dry ones. Mix with a sturdy wooden spoon until
mixture is completely moistened.
5. Spoon batter into each section of your tins. Go for about 1/3 full. No even rule here. You just
want enough for 2 dozen.
6. Bake for 10 minutes and check with a toothpick in the center. Be careful not to dry them out.
Let cool. Now what I do is to take 2 freezer Ziploc bags. One dozen gets put in the freezer, and the other goes in the fridge for the week ahead. I usually make these on Saturday or Sunday, since this is how we use them. Hope you give these a try. Don’t skip on the ingredients, especially the almond milk and butter and honey. Enjoy!!
