Store Bought Rotisserie Chicken…Good Bang for the Buck

So every Sunday, I start thinking ahead to the lunches I want to take to work for the days I go in. I try to keep it healthy, so deli meats usually aren’t part of the equation. I get tired of tuna, and can’t eat peanut butter because of my allergy.

Several months back for quick dinners we would now and then pick up a rotisserie chicken from the local supermarket. Since my husband is happy with chicken maybe once a week, I for one can eat it everyday. I love it that much. The leftover chicken would then become my lunch until it was gone.

I decided to just buy it for myself on Sunday to have for the rest of the week. It was easy to prepare, just pull off what I wanted, wrap up several days worth and go. Every now and then, I would save the breasts for another meal for us, or make sandwiches. This is one chicken that has never been tossed out. A 4 or 5 lb. bird runs about $5 or $6.

The lazy part of me appreciates that someone else can feed me for work cheap for several days, for what my coworkers spend on cafeteria food or carry out in one day. Plus that if you don’t eat the skin, you have a healthy protein meal. That is important to me since I sit for most of the day, and try to limit my carbs to fruit or whole grain products. I can eat it with bread or without.

Chicken will never get old for me. As I said, I can eat it more than once without getting tired of it. If you are looking for something quick and in my opinion, better for you than that carry out pizza or sub a few days a week, and you don’t feel like cooking, check out a rotisserie chicken. All you have to do is plan the sides!
